What makes chocolate dark
Dark chocolate is cocoa solids, cocoa butter and sugar, with no milk. Milk chocolate replaces some of the cocoa with milk solids, which is why it tastes sweeter and softer. The higher the cocoa percentage, the less room there is for sugar — which is the whole difference in one sentence.
Below about 50% cocoa a bar is barely dark. Between 55 and 70% is where most people find the balance. Above 85% the bitterness dominates and it becomes a taste you either want or you do not.
Choosing a percentage
If you are moving across from milk chocolate, start around 55 to 60% and work up. Jumping straight to 85% is how people decide they dislike dark chocolate.
For fillings, the percentage matters less than you would expect. A dark shell around a sweet filling — rahash, dates, caramel — balances differently from a plain bar, and the bitterness works as a counterweight rather than the main event.
Is dark chocolate actually healthier
It has more cocoa, so more flavanols, and less sugar than milk chocolate. That is the honest version. It is still chocolate, still calorie-dense, and the health claims attached to it are usually overstated by people selling it.
What is true is that a dark chocolate piece filled with walnuts, figs or dates is closer to a whole food than a filled milk chocolate bonbon. That is a matter of what is inside it, not the cocoa percentage.
Storing dark chocolate in Kuwait
Chocolate holds its temper between 15 and 18°C. Above that the cocoa butter starts to separate and you get the grey film — harmless, but it means the texture has gone.
The fridge is not ideal either. Condensation on the surface dulls the shine and can make it grainy. If you must refrigerate, seal it and let it come back to room temperature still sealed.
In practice: a cool cupboard away from the oven, eaten within a few weeks. Dark chocolate keeps longer than milk because there are no milk solids to go off.
